new on our dinner menu

one of my favorite restruants to eat at is BJ's Brewery. They have the absolute best chicken alfredo baked potato! I order it everytime! I haven't been to BJ's in quite some time but I was really wanting that potato! I thought to myself...it doesn't seem THAT hard to recreate. So I gave it a go...
I diced the two chicken breasts, lightly seasoned them and cooked them up..

In order to make this a quick and easy recreation recipe, I poked holes in the potatos (I used golden but I'm sure russet will do also) and put them in the microwave (I was super apprehensive about this because I don't normally use the microwave for cooking dinner unless it's for steam fresh veggie bags) for 5 minutes. When they were done, I turned them over and cooked them for another 5 minutes. (I have to say that microwave sure did impress me since I would not have thought otherwise to use it for baking potatos!)

I grated some cheese, popped in a broccolli steam fresh bag, and heated up some alfredo sauce.
Once everything was prepared, I loaded the toppings on my potato!

BADA BING BADA BOOM!

 (insert pat on the back here) Needless to say this has made it on our list of dinners I will make in the future. Quick. Simple. Delicious.
